Sauerkraut. A probiotic super-food. Not only is it super delicious and easy to make, but it also contains tons of nutritional value! Sauerkraut was never my favorite as a child-the supermarket flavorless canned variety grossed me out. However, 10 years ago, when I gave my mom's homemade sauerkraut a try, I've never gone back. The flavor is much more exciting and the texture has the perfect crunch. And not only does it taste good, but it's good for you! Reasons why? It contains a lot of Vitamin B & C. Plus a tablespoon of it alongside your breakfast, lunch, and dinner makes the meal more easily digestible as it helps to break down the food in your gut.
Because green cabbage already contains bacteria that enables it to lactoferment itself, it's a breeze to make. All you need is cabbage (which is pretty easy to find on sale during this time of year), salt, and jars or a crock.
