If you've never cooked yourself up a pasture-raised chicken before, you're in for a real treat. The flavor of a grass-fed bird is amazing, and nothing beats knowing that you're getting a whole heapin' helpin' of nourishment with each delectable bite. So how then do you cook a Botany Bay Bird? Well, there's really no wrong way to go about it. But if you're looking for a super tasty, super easy idea for an amazing pasture-raised chicken dinner ... well, you've found the right place!
Start off by acquiring for yourself one of these little beauties. Place an order today for your own chicken fresh from our family farm, or stop by Chucks Produce in Vancouver, WA to pick yourself up a bird today.
Begin by placing your plump little bird in a roasting dish.
Chop some vegetables and sprinkle them around your bird. About five stalks of celery, two onions, and eight medium carrots will do. If you're feeling fancy, stuff your bird's cavity with as much chopped onion as you can fit inside. The onion will delicately flavor the meat as it cooks.
Drizzle a little extra virgin olive oil over your bird and veggies, and then coat everything with a liberal sprinkling of sea salt, garlic granules, and black pepper.
Fire up your oven, get your forks and plates ready, and 375 degrees and 80 minutes later your bird will emerge from the oven in beautiful, roasted, golden perfection. It's as simple as that!
